It's time for new things

I'm a fickle little thing and I'm feeling the need to change things up a bit around here at Hear Me Roar. Here are the likely changes you'll see happening semi-soon:

1. I'm likely moving over to Wordpress. I think so. I'm almost sure. I hate Blogger's comments section. I want to be able to comment back on specific comments. I also want to section out my blog so I can have multiple sections - which takes us to point two . . .

2. I'm probably going to segment the blog out a little bit and add a section on cooking. This is primarily inspired by my niece, Jenell, who called me yesterday and said, "Aunt Stef, I need you to show me how to cook. Can I have some of your recipes?" She's young, married just a few years with two little kids and a husband who works a lot. She needs some basic recipes and techniques to work with; the basics and a bit more. I said I would send her recipes and then I thought, OH MY GAWD, I can't imagine organizing my recipes enough to send to her without doing something MORE with them, you know? Like putting them out there in a blog for other people to use. So, that's just what I'm going to do. 

3. Name change. Yep, I'm changing Hear Me Roar to something else. I have a few ideas. Nothing set in stone yet, but maybe something with "sassy" in the title. Because I'm sassy. (My husband says so).  Hear Me Roar is always going to be aligned with the women's lib movement and, though I'm AM a feminist, I don't necessarily write about those things. I need a name that will reflect the foodie in me as well. So the name change is about finding a name that's perfectly me.

Back to the foodie thing. I have to admit it: I am a foodie. I love good food. My husband said the other day that he thinks when we really cook a good meal it's better than what we can get at most restaurants. Plus it's made with love just for us and our friends and family. 

I love cooking & baking. Love it. If I could quit my job I would go back to school to be a baker and open a bakery/coffee shop thing of some sort. (As if we don't have enough of those, right?) But, seriously, my husband worked as a barista eons ago and managed a coffee shop - we could do this. The thought just absolutely makes me giggle. And if it was a used book store too? Heaven.

Okay, so that's a bit of a pipe dream, right? Right. In the meantime I'll be changing my blog so keep an eye out.

Slacky McSlackerton here

Hi, it's me. Remember me? I used to try to post a couple times a week but lately not so much and I feel badly about it. There is life happening here, you see. And life takes precedence over blogging. It must otherwise I wouldn't have anything to blog about, right? 

It's after midnight on a school/work night and I'm going to have to make this brief. And full of pics. Instagram, to be more specific. Because I can't find my real camera again. For reals. I DON'T KNOW WHAT'S WRONG WITH ME. *sigh* Moving on. 

So these things have been happening:

We had a mini-twister hit our backyard. It was the weirdest thing. Knocked one tree down, and lifted and twisted a small tree nearly off its stump. And killed a duck. Sad. So this is the big tree that fell:



It leaned like that for a week before we got a tree service out to chop it down. For mucho moolah, might I add. Grr. But they left the rounds for us so we can use them as firewood next year. Can I just say that's some pretty dang expensive firewood?


Since the weather has finally started to get Spring/Summer-like we've also been doing a lot of work in the yard. We've planted a few plants and have just been cleaning up some of the beds. I love that my kids get involved now so much more than they used to. I took this 2 days ago and the light was just perfect (you can see our oldest sweeping on the right):

But this Saturday was the first time he actually made it home during a game so it was monumental. He has batted last in his previous two games, but on yesterday's game he batted first. He's doing great and getting better each game/practice we have:


I love that pic. Great light. But, because of that light I developed a sunburn. Unexpected and weird. I was wearing a cap and v-neck t-shirt so I have half a face sunburn and v-shaped redness on my chest. Weird. (I won't torture you with that pic.)

After that game was over yesterday the rest of the weekend was about getting ready for my sister's visit. My (step)sister from Australia, to be more specific.

She's awesome. I first met her in '98 and I've seen her maybe 2 or 3 times since then. The funny thing is, she went to my high school 5 years ahead of me but I never knew her. I didn't meet her until after her mom & my dad had been together for quite some time because she had moved to Australia. She met an Aussie in SLO in the early 90's and followed him back to AU and stayed. I like her a lot and we get along great. I wish I had known her a long time ago. Not that I wish my parents had split earlier than they did, but it would have been cool to have an older sister like her. She has a pretty awesome husband and two kids as well. Every time the kids speak I think they are going to sound like Americans and then they sound totally Australian and it's too freakin' cute.

So, interesting side note, my sister worked at the Australia Zoo with The Crocodile Hunter, Steve Irwin, and his wife, Terri. Terri is an American - she's from Oregon - and she and my sister became friends. My sister has always been an animal NUT and the Zoo was an ideal place for her to work. Don't believe me? BAM!:

So the cool thing about their visit tonight is that our husbands never met before and we hadn't met their son (though my sister and her daughter were here a couple years ago). I was excited.

I got up Sunday morning and did a few things in the yard and then started the food prep for 10 of us. We were going to BBQ, but my husband has had performances (he's an actor) both afternoons this weekend so a lot of the prep was left in my hands and it was a LOT of freakin' work. I started the food prep about noon and didn't finish until 4 pm. At which point I still needed to clean the house and shower before they got here at 6:30. I started to PANIC. Then I died. No, not really. Just felt like I might.

Food prep consisted of marinating both chicken & beef for kebabs, cutting up and marinating all the vegetables, making a greek spinach, feta & pasta salad with a homemade dressing, making a fruit salad and strawberry cheese fruit dip, and making cookies. 4 flippin' hours, people, with nary a break - except to make lunch for the kids and occasionally play referee to their bickering:


But, thankfully, it all turned out lovely and oh so yummy:

Love it! Love them. Great night with fun people. Now I'm utterly exhausted and apparently I have to go to work tomorrow. Really? Because I feel like I've been working all bloody weekend. I guess it's not the same.

3 words: Chocolate Mug Cake

Warning: this post is for chocoholics. If you are not a chocoholic then you may want to go on your merry way until I get around to my next post about something that isn't about chocolate. It might be a while. 

A few weeks ago my husband sent me a link to a cake recipe he wanted me to make. This is unusual because, generally speaking, he doesn't like me to bake. I mean, he likes baked goods as much as you and I (well, maybe not as much as me) but he's trying to lose weight. I, on the other hand, am watching my weight . . . watching it stay the same. 

Moving on.

So this past Friday night the boys were asleep (or in bed, at least) and the hubby went outside to smoke a cigar (deplorable habit) and I wanted a little something. Just something dessert-like. With chocolate, of course. It's not a dessert unless it's made with chocolate. 

Then I remembered the mug cake recipe! Excellent idea. I tracked down the recipe in my email inbox and quickly skimmed the ingredients list. 

Whoa, what's self-rising flour? Seriously, I have to buy a special flour? 

Time to do some Googling.

I was happy to find out that it's super easy to make self-rising flour. Essentially for each cup of all-purpose flour you just need to add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt and mix. Easy-peasy lemon squeezey. I made a cup of it and stored it in my pantry for future mug cakes.

I didn't have Nutella (or Justin's Nut Butter which, according to my friend Joni, is even better than Nutella and possibly better for you) so I ran to the store. At 10:30 at night in my comfy clothes. (Needless to say, Must.Have.Chocolate prevailed). No Justin's Nut Butter in my local Albertson's so I picked up the Nutella and whipped cream. Normally I make whipped cream from scratch but I was trying to make things simple and quick so I got a can. 

10 minutes later I was sitting on my sofa, turning on House Hunters International and eating chocolate cake out of a mug. 

I was, in fact, eating this very thing: 

Here's the full recipe & instructions:

Nutella Mug Cake

4 tablespoons self rising flour
4 tablespoons white granulated sugar
1 egg
3 tablespoons cocoa powder
3 tablespoons Nutella (or Justin's Nut Butter)
3 tablespoons milk
3 tablespoons oil (vegetable or canola preferably)

1. Combine all ingredients in a large coffee mug (the large part is important if you want to keep your microwave clean). Whisk well with a fork until smooth. Microwave on high for 1 1/2 – 3 minutes. Time depends on microwave wattage. Mine took 1 minute, 40 seconds. If you cook it too long it will be dry. The top should look kind of wet but if you stick a toothpick in (or a finger, like me) then it should be cake-like inside.

2. Toppings. I topped with whipped cream, chocolate syrup & a sprinkle of cinnamon. I have a suspicion that warm, soft caramel drizzled on top of the cake and then topped with whipped cream would be freakin' fantastic.

The recipe makes 1 very large serving. This is a perfect shared dessert with your honey if you are feeling all romantical. (If your honey is being a butthead then DO NOT SHARE. This is serious stuff, man). I luuuurve chocolate but I could only eat about half and then put the rest in the fridge for the hubby the next day (yes, the next day. Due to the previous butthead instruction). So on Saturday morning I told him what I made and he bee-lined for the fridge. He ate half of it cold but I think it was even better after I warmed it in the microwave for 30 seconds or so.

It doesn't have a real Nutella flavor that I could detect. I wonder if playing with the amount of Nutella, or changing when the Nutella is added (like after it's all mixed up, or mid-cooking process) would provide more of that hazelnut flavor. Hmmm, if you try any variations please let me know.

The week in photos: a recap

Warning: lots o' pictures in this post. Some of food. Some of people. Some of other stuff. Some of teeth (or missing teeth). It was a busy week.

Unfortunately all the photos are from my phone because I have misplaced the cord to charge my camera. (I hope I didn't leave it in the last hotel room I stayed in. I hope, I hope. I did that last year with my phone charger and have been kicking myself ever since.) Anyway, apologies for the quality of the pics. I really, really want a good camera but until I can afford that it would be nice if I could at least find the cord to my little Fujifilm point & shoot digital.

The boys (all three of them) were on Spring Break so they were all very, very happy about that. I had to work, a lot (end of the financial quarter and I was covering for my boss) but the fun stuff off-set the work stuff nicely.

We started the week by all going out to lunch.

We rented Just Dance 2. The boys thought it was going to be L.A.M.E. and that they couldn't possibly get up and DANCE, like, in front of PEOPLE. But after watching me & the hubby do it, they were more than ready to try it. And, no surprise, they freakin' loved it. (Note: if you are well-endowed, like me, then when your 7 year old begs you to play Just Dance before bed and you have already taken your bra off do NOT dance to "Jump.")


We also had a wide range of weather (a friend of mine remarked that Mother Nature must be menopausal). Snow, rain, and later in the week sunny & 70 degrees. I never get tired of looking up and seeing the snow on the mountains just 20 miles away from us.


I went to the chiropractor 3 times (where, one day, an adorable 2 yo fell asleep on the table waiting for his adjustment and then SLEPT THROUGH THE ADJUSTMENT). Wow. 


And I made flautas for the first time. They were oh so yum. (Fattening though. Warning: You may gain a pound just looking at the pic). I also made the Pioneer Woman's Brother's Chicken Tacos - but didn't snap a pic of those. I make Mexican food at least once a week.


The sad news of the week was the untimely demise of my favorite pizza stone. I had it even before I had my children. Even before I was married. So sad. It was left on a hot burner and cracked down the middle. You can't see the crack but it's there. (The odd white round mark was left by a pan lid that was on top of the pizza stone.) Can you see how perfectly seasoned it was? Oh, the tragedy. 


But then my little one wanted a pic with his mom & dad and the world was okay again.


I received this picture texted to me while I was at work so I'm not sure what happened, but the Tooth Fairy visited us again that night - just a week after her last visit. I really need to make this guy some Jello so he can learn how to shoot it out through the holes. Hee hee. (Oh, I WAS disappointed to find they didn't buy any chocolate chips. Duh, they were right.there.)


On Saturday the hubby's acting group premiered a new train show. It's a Wild West idea, and the hubby is a bit of a bumbling but dedicated Confederate General. This is him the night before trying his costume and crazy face on. 


We went to our nephew's birthday party on Saturday. My little one insisted he wouldn't go outside because of the dog - and then proceeded to follow the dog around and eventually try to ride him like a horse. Also my twin nieces are in the picture. So stinkin' adorable I want to eat them up.


Then we marked World Autism Awareness Day, on April 2. You can read my post about it here. We put a blue light bulb in our front porch light and we all dressed in blue to show our support for the event. When we went outside to take this pic we noticed our neighbors next door had also put blue light bulbs in their outside lights. I WAS STOKED.

Anatomy of a snap-happy Sunday

Bless him, the hubby let me sleep in. Then, when he was so hungry he couldn't wait anymore, he crawled into bed with me and said he had already cooked the potatoes and could I please get my lazy arse out of bed and make him a scramble? Fine, fine! 

I got up and staggered my bones to the kitchen and began cooking. In the same pan as the cut up and sauteed potatoes, I added diced ham, aromatics (onion & garlic), and let it all combine on medium low heat. Then whisked 5 eggs, a diced scallion, and salt & pepper in a separate bowl. I added the egg mixture in and stirred a few times to scramble all together. Then turned the burner off, put some cheese on top and put the lid on to let the cheese melt. It was YUM. Plus I had enough leftover to make 6 breakfast burritos for us next week. Total score.

We sat down to eat breakfast and decided to flip on the Netflix and watch the 1st episode of Doctor Who (since it was restarted in 2005). It's been highly recommended from our friend, Britt. But I think the jury is still out with me and the hubs. We'll have to watch a few more before we decide. 

Then we started our day in earnest. I sent the kids to take out the recycling and play. Lo and behold they decided to do work:

Food & Drink

FOOD

I have been asked for this recipe several times lately so I thought I would just share it here. It's super easy to make, and quick, but you probably don't keep some of these ingredients on hand. At least I don't! But it's worth it. 

I can't take credit for this - I got it from my friend Jenni's mom. 

Mexican Chicken Corn Chowder

2 whole chicken breasts
1 onion (chopped)
2 garlic cloves (chopped)
1 Tbsp. of oil

Saute chicken, onion & garlic in oil until chicken is cooked through. (Do it in a large pot so you don't have to dirty two pans!) Cube the chicken when cooked and put back in the pot.

Add:
2 cans creamed corn
2 cups half & half
2 cups monterey jack cheese, shredded
1 can diced green chiles
2 tsp. cumin (to taste)

Bring to a simmer and add:
A splash of hot sauce (to taste)
Chopped fresh cilantro (to taste)

If the soup seems thin it can be thickened with corn starch. We like to make it thick and then eat it with tortilla chips. Totally YUM. 

DRINK (of the alcohol variety)

Now, I'm not a huge drinker. Really, 3 is usually my limit and I'm such a control-freak that I tend to always opt to be the designated driver. In the past I have never been one to try shots; I just wasn't into drinking to get drunk - and what else is the purpose of a shot?? 
Well, our good friend Brittain introduced me to a shot that I love. It's sweet and sour and I can drink them down almost like water. (Not really, but, almost). Try this. I make 2 cups of this at a time and keep it in the fridge. You know, for emergencies. 

Chocolate Cake Shots

1/2 shot citrus vodka 
1/2 shot Frangelico hazelnut liqueur 
sugar-crusted lemon wedges

Mix equal parts vodka and Frangelico into a shot glass. Drink the shot, and follow it immediately by sucking on a sugar-coated lemon wedge.

On being busy

Started before Christmas:

But I think she MUST have been talking about women only.  Not that I don't appreciate men, because I do - I really, really do (especially that cleft between their hip and groin area - swoon) - but I know very few that are good multi-taskers. Now that we are 4 days away from Christmas this multi-tasking deficiency is painfully obvious.

Christmas is CRAZY. Super-duper, going nuts, spending money, shopping, wrapping, picture-taking, printing, Christmas card mailing, party-attending crazy.

Finished after Christmas:

See what I mean about being busy? I couldn't even finish my blog about being busy! How ridiculous. Anyway, we got through Christmas fairly intact - though, to be honest, I totally crashed on day 4 of the festivities. It was after the last get together - the big one with the hubby's family in which I made cupcakes, cookies, deviled eggs, candied yams and mashed potatoes and took it all over to the in-laws' house for a 7 hour preparation, eating, gift-opening THING - that I came home and just nearly passed out. I laid on the sofa in my comfy clothes like a log. The next day was a work day and I started getting sick. The following day one of my lymph nodes was so swollen I couldn't swallow without significant pain. I went to the doctor - which goes to show how freaked out I was (OMG! What if it's cancer??) - and she said virus. That was two days ago and I'm definitely better today.

But that brings me to a very good point. My doctor lectured me because, she said, "I only see you when you're sick! How about coming in for a physical?" Ugh, who has time, or inclination, for that? Seriously, I'm too busy . . . right? Well, the right answer is no, I'm NOT too busy to work on my health. I just don't want to deal with it. It's not a simple thing - zip in and out - because there's the lab work first and the fasting with that, and then, inevitably, there is something more that needs to be done - like medicine to treat certain things or follow-up appointments and, perhaps the most dreaded, the conversation about a  "healthy weight". Well, yes, I know perfectly well what a healthy weight is and I know that I am not in that range. I really don't need the lecture and the guilt that follows. I swear, the guilt will kill me one of these days. (Side note: one time Poohbear's teacher asked me if I was Catholic because I had the guilt thing down pat). It's so unfair. I actually eat fairly healthy; by that I mean that I'm not a fast food person. We cook good food from scratch here. We eat lots of veggies and get our protein. We eat good carbs. BUT, chocolate is my Achilles heel. I have a relationship with chocolate, and with all GOOD food. I want MORE.

Which would all be okay if I balanced my food with exercise. I don't mind exercise when I do it; I actually feel really good afterward. I just can't seem to do it much. I'm so, so tired at the end of the day, and there's so much to do, I have trouble fitting it into my day. I want to relax and escape after a hard work day - not get my tennies on and get up on the elliptical. I already don't get enough sleep and I'm decidely NOT a morning person.

Yes, yes, excuse central - I know. One of these days I will suck it up and do it. Hopefully soon. For my health. Plus - ugh - my 20 year class reunion is in less than 3 years. I will ONLY go if I'm under 140 lbs. *sigh*

To sign off, though, I will add something positive - when I went to the doctor it was Dec 28 and she said the last time I was there was the previous January. I actually weighed 3 lbs less on this visit, 3 days after Christmas, than I weighed a year ago in January. That's something, right?

Baking gluten free for the first time

My brother-in-law got remarried last week to a truly sweet, wonderful woman and she'll be a real asset to my husband's side of our family. She and I bonded right away and I look forward to many more family get-togethers with her. But she's now providing us with a challenge we haven't previously dealt with; she has Celiac disease, which is essentially gluten intolerance. We've been really lucky that we have never had to worry about any food allergies or "intolerances" in the past, but now, going forward, we're going to have to be much more aware of what we cook and how it's prepared to make sure it's not contaminated with any wheat proteins.

So yesterday was their small family wedding reception and everyone was supposed to bring a dessert. I decided to make gluten-free brownies in her honor and to show that we are taking on the challenge. My cousin-in-law also decided to make something gluten-free, but I don't know that anyone else did - Yay for us! 

I did my homework. I looked up what chocolate I could use and what double-checked every label of my ingredients to make sure it was okay - except one thing. I put my first batch together and sprayed a mini-muffin pan so that I could make brownie bites. Then I filled each cavity about 3/4 full and baked them. Then I thought, "hmm, I didn't look at that cooking spray" and, sure enough, the label says it may contain wheat traces. Damn! I dumped the whole batch into the garbage. And, to be honest, I didn't care too much for some of the flavoring I added so I made a second batter and changed up the recipe a little bit.

I was going to add butterscotch morsels but then I read the label and realized that the butterscotch contains barley malt. So I just added milk & semi-sweet chocolate chips to the batter. (I used unsweetened Baker's chocolate for the batter - which is safe - but the Baker's bittersweet chocolate is made with alkali processing and that ISN'T safe). I owe a lot of my homework to Labelwatch.com, by the way. This time instead of using cooking spray I used mini-cupcake liners. I also decided to dust the brownies with powdered sugar and discovered that SOME powdered sugars can have added wheat-based fillers so it's important to check the label of the powdered sugar you are using.

I took the brownies to the party and my new sister-in-law tried them and LOVED them. She raved about them and made sure to give some to her mom who is also gluten intolerant. Yay!

I now have gluten-free flour in my pantry for future baking endeavors, but I'm sure it's going to be tough to always double-check what I can and can't use in my dishes to allow her to eat the food we provide. It's a good challenge though! So many people are gluten-intolerant now that it's something we all need to be aware of when we entertain.

UPDATE: my new sis-in-law is now asking me for the recipe. I call that a success!
